Knowing this lady, I chatted with her. She was thoroughly disgusted with her family as they wished to have tacos for Ckristmas. A turkey meal was far from their minds, so to please the 3 kids I am shopping for things to put into a taco salad. She said pizza was mentioned too. I did tell them that was out. When I got home I looked up a recipe for taco salad. This did not appeal to me, but some must like it. Here is a taco salad recipe I found in the "Pioneers of Alaska Cookbook". Taco Salad 3/4 lb. ground beef crumbled, browned and drained * I can kidney beans, drained and rinsed * 2 tomatoes, chopped * 1 small head of lettuce * 1 scant cup cheddar cheese * 1 medium onion, chopped * Black Olives Chopped * 1/2 pkg. regular corn chips, crushed (not too fine) * 1 regular size bottle thousand Island Salad Dressing Mix the first three ingredients together and let stand. Finely shred or tear the lettuce. Grate about a cup of cheddar cheese. Add the chopped onion and black olives. Crush corn chips in medium chunks, not to fine. Gently fold all together with 1 regular size bottle of Thousand Island dressing. This recipe recommends an ice tea drink served with taco shells. Leftover Turkey 2 cups of cut-up turkey * 1 1/2 cups chopped celery * 3)4 cup mayonnaise * 1/2 cup toasted, shvered almonds * 2 Tbsp. finely chopped onion * 1/2 tsp. salt * 2 Tbsp. lemon juice Combine all ingredients and put in a 1 lf2 quart casserole. Sprinkle top with crushed potato chips and a layer of grated cheddar cheese. Bake 20 minutes at 425 degrees or until just heated through. Cranberry Salad 2 small boxes red jello* 2 cups ground cranberries * 1 cup applesauce * 1 cup sugar Mix all together and let stand for 2 hours. Mix; chill and serve. This will keep up to 2 weeks in refrigerator. Cranberry Pumpkin Bread 2 eggs slightly beaten * 2 cups sugar * 1 Tbsp. pumpkin pie spice * 1 1/2 tsp. soda * 1/2 cup vegetable oil * 1 cup pumpkin * 2 1/4 cups flour * 1/2 tsp. salt * I cup cranberries chopped Combine eggs, sugar, oil and pumpkin. Mix well. Combine flour, pie spices, soda and salt in a large bowl. Add pumpkin mixture. Stir in cranberries. Spoon into 2 greased floured loaf pans. Bake at 350 degrees for 1 hour or tested until done. Merry Christmas!! Until next time "Dell" To the Walsh Winners 4-H Club, Thank you for the beautiful trays of delicious Christmas baking and for thinking of us old ladies at this time of year.
