There are many issues facing a victim of domestic violence that you may not have considered. "In her Shoes" is an interactive experience for learning about domestic violence; participants move, do, think and experience the lives of battered women. There will be time for discussion and refreshments following. The event will be held Saturday, Oct 15, at the Mountain Community Center in Mountain at 1:00pm. It'said pancakes originated in Norway. The recipe stated,it make 18 cakes and were baked in your waffle iron. I made half a recipe, they were good and on the crispy side. Here is the whole recipe for the 18 pancakes. Pancakes 1 1/2 cups buttermilk * 3 egg yolks * 1/4 cup shortening, meltff:(I used margarine) * 1 1/2 cups sifted flour * 1 Tbsp. baking powder * 1/2 tsp. soda * 1/4 tsp. salt * 3 egg whites beaten stiff Combine buttermilk, yolks and shortening in a bowl. Sift together dry ingredients and add to buttermilk mixture, stirrin bnly until smooth. Fold in the egg whites. Bake on a lightly greased hot griddle using 2 tablespoons butter for each cake and browning on both sides. Good Pancakes 2 eggs beaten * 1 Tbsp. sugar * 1/4 tsp. salt * 2 cups milk 6 Tbsp. cream * 2 cups flour * 2 1/2 Tbsp. baking powder Beat eggs, sugar and salt. Add rest of ingredients and mix well. Cook on hot griddle. Potato Pancakes 4 cups grated potatoes * 4 eggs * 4 Tbsp. flour * 1 1/2 tsp. salt * 2 tsp. baking powder After grating potatoes, there will be quite a lot of water, drain some off. Mix all ingredients, mixing to a consistency of pancake batter. Use some of the drained water if needed. Bake on a greased hot griddle, turning once. Blueberry Pancakes 1 cup flour * 1 cup wheat flour * 4 tsp. baking powder * 1 Tbsp. sugar * 1 tsp. salt * 1/4tsp. cinnamon * 2 cups milk * 1 egg beaten * 1/4cup vegetable oil "1 1/2 Tbsp. lemon juice 1/2 tsp. vanilla * 1/2 cup drained, canned blueberries Combine the flours, baking powder, sugar, salt and cinnamon in a large bowl. Mix well. Stir in milk, eggs, oil, lemon juice and vanilla. DO NOT OVER MIX. Gently fold in blueberries. Preheat griddle to hot or electric skillet (400 degrees) Stir through batter several times, using about 1/4 cup of batter for each pancake. (Each cake should be 3 to 4 inches in diameter) Cook pancakes till done, turning once, about 3 to 4 minutes.
