With the many meats that are served, chicken is served
the most. Even on holidays this meat is often preferred,
especially if it is made different at this time rather than just
plain roasted or fried. This hony-dipped, crunchy chicken is
a favorite for kids as well as grown-ups.
I love crunchy chicken pieces,like this recipe calls for. Try
them, won't you?
Honey Dipped Crunchy Chicken,
3 Tbsp. honey, 1 egg white, lightly beaten, 2 lbs. skinless
boneless chicken breast, cut into 1 1/2 inch chunks, 1 cup of
cornflake crumbs, 1/2 tsp. salt, 1/2 cup light mayonnaise, 1/4
cup prepared mustard
Preheat oven to 400 degrees, Spray a large baking sheet
with non-stick cooking spray. In a large bowl mox 1 Tbsp. of
the honey and the egg white. Add the chicken, stir and coat
well. Transfer the chicken to a colander and set over a large
bowl. On a sheet of wax paper, combine the cornflake
crumbs and salt. One at a time dip the chicken pieces into
the crumbs then place on the baking sheet. Spray the tops
of the chicken lightly with non-stick cooking spray. Bake
until the chicken is cooked through (8-10 minutes) Mean
while in a small bowl, mix the mayonnaise, mustard and
remaining 2 Tbsp. of honey. Serve the chicken chunks with
the dipping sauce. This makes 10 servings.
Rosemary Roast Chicken
2 garlic cloves, peeled, 1 tsp. dried rosemary, 1 tsp. olive
oil, 1/2 tsp. salt, 1/4 tsp. pepper, 1 lemon halved, One 3 1/2
to 4 lb. chicken
Preheat oven to 350 degrees. In a mini food processor
combine the garlic, rosemary, oil, salt and pepper. Puree
this. Rinse chicken inside and out. Pat dry with paper
towels. Remove any visible fh. Gently loosen the skin over
the breast. Rub the rosemary mixture under the skin.
Squeeze the lemon over the chicken and place the halves in
the cavity, Tuck the wings under the back. Place on a oven
rack in a roasting pan. Roast basting occasionally with pan
juices. Roast chicken for about an hour to I hour 20 minutes.
Transfer to cutting board, let stand 10 minutes before
carving. Remove skin before eating.
Chicken Salad
1 1/2 lbs. chopped cooked chicken breasts, 3 cups of
chopped celery, 2/3 cup of pecan halves, 4 tsp. diced onions,
2/3 cup green grapes,
Combine all ingredients, mix thoroughly.
Dressing:
1 1/4 cups mayonnaise, 1/2 cup and 2 Tbsp. cool whip, 1/2
tsp. curry powder, 1/2 tsp. white pepper, 1/8 tsp. salt, 1/2 to
3/4 tsp. lemon juice
Combine dressing mixture then add to the chicken
mixture.
**DO NOT STORE IN A METAL BOWL**
