I did take the time to make it. I was afraid the jar would break, explode or something leaving glass and cake batter all over my oven, a real mess for me to clean up, but that was not the case. All turned out well and was delicious. My sister-in-law liked it to, as I took one to her. This recipe makes 2 cakes (2 jars). I'll make it again and have this so called "Quickie Cake" in my freezer when company comes. Here is that recipe. Quickie Cake I box cake mix * 2 wide mouth jars Mix your cake up according to the directions on the box. Coat the inside of the jars with a non"stick spray, filling them just half way with batter. Place the jars on a cookie sheet and bake at 350 degrees for 30 minutes. When the cake is done, right from the oven and hot, put the lid on, the jar will seal. Freeze it. Another friend, Joann Votava had taken "Banana Bars" to an Altar Society meeting, that were out of this world. I had some really ripe bananas on hand, I called her for the recipe asking if she would share it with the public, "Could I put it in my column?" You certainly can was her reply. Here is that "Banana Bar" recipe. Banana Bars 1 1/2 cup flour * 1 cup sugar * 1/2 tsp. soda * 1/2 cup shorting * 2 eggs * 1 tsp. lemon juice * 1/2cup milk * 2 mashed bananas Mix all ingredients thoroughly. Put in a 9 x 9 inch pan that you have greased. Bake at 350 degrees for 25 to 30 minutes. *Frost these bars with a powdered sugar icing. Thanks Penny and Joann for these recipes. This is one of the finest zucchini bread recipes I have ever come across. Zucchini Bread 3 eggs * 1 cup vegetable oil * 2 Cups sugar * 3 cups flour * 1/2 tsp. salt * 3/4 .tsp. nutmeg * 2 tsp. vanilla * 2 cups shredded, unpeeled 'zucchini * 2 tsp.. soda * 1 1/2 tsp. cinnamon * 1 1/4 tsp. baking powder * 1-8 oz. can crushed well drained pineapple Mix eggs, oil and sugar in a large bowl. Add vanilla, zucchini and pineapple to that mixture. Mix flour, soda, cinnamon, baking powder, salt and nutmeg together and then add it to the zucchini mixture. Pour it into 2 well greased 9 x 5 x 3 inch loaf pans. Bake at 350 degrees for 1 hour. Cool slightly before removing from pans and cool completely before slicing. Wrap in foil and refrigerate. The local schools began the year with an enrolhnent of 301, up 17 from last year. This figure in- cludes 73 in the high school. This figure quickly increased to 78-- but there were seats for only 77 students. Somehow the principal managed to arrange seating for 95, even as the total enrollment for the. school district rose m 335. Two transients got off the freight train and headed for the hobo Jungle, with a couple weighty grips. The suitcases were found to contain 30 pints of whiskey, which the men claimed was for personal consumption. They were taken before a local PAGE 1 magistrate, who couldn't prove that they had sold any--so he fined them $5.00 each and gave them ten days in jail for vagrancy. , They were allowed to go threshing to earn the fine money. [The paper made no mention of what hap- pened to the whiskey.] The wheat harvest looks to be the best in several years. Most of the wheat is grading #2 Northern. Some nearby yields: David Ford 15-20 bushels per acre, Neff Campbell 29, John Peoples 28, Ole Stevens 19, Pat O'Brien 27. Clarence Dangerfield and WP, Hoover, two Mormon missionaries from Provo are in .town and will hold meetings tonight and tomor- row. They have just come from the Milton area.
