Vegetables from the garden at this time are about ready to make that relish. This recipe is good on a hamburger and I am guessing that is how it got its name. Hamburger Relish 6 large cucumbers 3 medium size onions 8 ribs celery, chopped fine 3 green peppers 1 sweet pepper Grind in order given except celery. Sprinkle 1/4 C. salt on cucumbers and some on peppers and onions. Keep each in separate bowls after ground. Let all stand 1 hour with salt. Wash salt off with cold water thoroughly, set aside. Syrup 2 C. sugar 1 tsp. celery seed 2 C. white vinegar 1 tsp. white mustard seed Bring to a hard rolling boil. Add all vegetables and boil 30 minutes. Put into hot jars and seal at once. *Makes 5 pints. Sweet Green Tomato Relish 1 green pepper 3 medium size onions 44 C. green tomatoes 3 apples (not delicious, don't peel) Grind tomatoes, onions and squeeze excess juice. Mix up the following: 2 1/2 C. sugar 3 tsp. salt 2 tsp. celery seed 2 1/2 C. vinegar 2 tsp. mustard seed 1 small can pimentos With the juice, mix all ingredients and boil about 15 minutes. Seal in hot jars. Carrot Relish 3 C. grated carrots 1 Tbsp. sugar 6 Tbsp. half and half cream 1/8 tsp. salt 1/8 tsp. pepper 1 C. seedless raisins 6 Tbsp. mayonnaise 1 Tbsp. Lemon juice Mix carrots and raisins; Sprinkle with sugar and toss lightly to mix. Chill 1/2 hour. Blend remaining ingredients. Stir carrot mixture just before serving. This may be served as is or spoon it onto lettuce for salad. ' "Cukes" and Cream Relish 2 unpeeled cucumbers, sliced 1 Tbsp. salt 4 C. cold water Let ingredients mixed, stand for 15 minutes.
