This beet relish is often used when a pork or beef roast is the main meat at a meal. Beet Relish 2 cups ground beets * 1 1/2 cups white vinegar * 1 pkg. Sure-Jel * 6 1/2 cups sugar Wash and cook beets until tender (leave a little of green top and root while cooking) remove skins, cut off top and root, then grind. Combine 2 cups of beets, Sure-Jel and vinegar in saucepan and bring to a boil, stirring constantl3; add sugar and boil for 3 minutes. Stir often to prevent burning. Transfer hot mixture to sterilized jars and seal. (Makes 4 pints) Dilled Green Beans 4 lbs. green beans (about 4 qts.) * 1/4 tsp. crushed red hot pepper, per pt. jar * 1/2 tsp. mustard seed, per pt. jar * 1/2 tsp. dill seed, per pt. jar * i clove garlic, per pt. jar * 5 cups vinegar 6 cups water * 1/2 cups canning salt Wash beans. Cut into lengths to fit pint jars, packing them into hot jars. Add pepper, mustard seed, dill seed and garlic to each jar. Combine vinegar, water and salt. Heat to boiling, Pour over beans and seal jars. Process in water bath for 5 minutes. (Makes 7 pints) Sweet Sliced Dills Sliced onions * Fresh dill * Sliced cucumbers * 1/2 tsp. l alum per pt. jar * Brine: 6 cups of vinegar * 6 cups of sugar * 1/4 cup canning salt Put a slice of onion and dill on the bottom of each pint jar. Pack with sliced cucumbers. Put dill, garlic, onion slices on top, add alum. Combine vinegar, sugar and salt to make brine. Pour hot brine over all and seal. (Makes approximately 9 pints) Green Tomato Chutney 8 lbs. green tomatoes * 3/4 cup chopped onion * 1 cup brown sugar * 3/4 cup salt * 1/4 tsp. pepper * 1/4 cup mixed pickle spices * 3 gloves garlic * 3 cups white vinegar * 1 lb. tart apples * 3/4 cup white raisins * 3/4 cup sugar Core and quarter tomatoes. Combine in large kettle with onion, brown sugar, salt, pepper, pickling spices, garlic and vinegar. Boil this mixture for 15 minutes. Strain through colander (this strains out whole spices). Return to heat; Core and chop apples, combine with raisins and sugar. Simmer until fruit is soft. Stir into tomato mixture and pour into hot pint jars.
