Cool room temperature [br eggs gives you best results. 2. A few drops of vinegar will keep poached eggs from running all over the pan. 3. By adding vinegar to water, you can boil cracked eggs without having the white mn out of the shell. 4. Beaten egg whites will be more stable if you add 1 tsp. cream of tartar to each cup of egg whites. 5. A small funnel is handy for separating egg whites from yolks. Open the egg over the flannel and the white will run trough and the yolk will remain. 6. Remember, brown and white shelled eggs are the same quality. 7. When you make your next meringue from egg whites, add 1 Tbsp. of water per egg white and see how nice mad fluffy it will be. 8. To keep egg yolks fresh for several days, cover them with cold water and store in your refrigerator. 9. For baking, use medium sized eggs. Large sized eggs may cause a cake to all when cooked. 10. When eggs are stuck to the carton, just wet the box and the eggs can be easily removed without cracking the shells. 11. Did you know a hardboiled egg will spin? Spin it and see. A raw egg will wobble. 12. To remove egg yolk which has been dropped into the white, use a comer of a wet cloth or a piece of the egg shell? 13. A bit of salt added to water with eggs boiling will keep them from cracking. Here are some tips about lemons l. If you have lemons in your refrigerator, immerse in hot water a few minutes before using to extract the maximum amount of juice. 2. Drizzle fresh lemon juice over scrambled eggs. 3. A cut lemon half when cooking cauliflower will keep it white and eliminate odors. 4. Lemon with new potatoes and dill is a treat. 5. Freeze lemonade cubes and add it to any of your favorite fruit drinks. 6. Squeeze flesh lemon juice over sautred zucchini or on the rounds of sautred canots and aTated onions.
