It is true, one is to eat a good breakfast and pancakes are considered for that meal. But to each his own, I'll eat them for t my evening meal, or even waffles. Good Pancakes 2 large eggs * 1/4 cup oil * 1 cup buttermilk * 1 tsp. soda * 1/2 tsp. salt * 1 tsp. baking powder * 1 1/4 cups flour Beat the eggs well. Add the soda dissolved in the buttermilk. Add the oil stir in salt, mix the baking powder in the flour. Pour onto hot greased griddle and bake by turning once. Pancakes 2 cups flour * I tsp. baking powder * 1 1/2 tsp. soda * 2 Tbsp. sugar * 1 tsp. salt * 3 eggs-beaten * 2 1/2 cups buttermilk * 4 Tbsp. melted shortening Sift with flour the next 4 ingredients. Add buttermilk and shortening, fold in beaten eggs. Fry on hot griddle until done. Apple Sauce Pancakes 1 cup flour * 1 tsp. baking powder * 1/4 tsp. salt * i Tbsp: sugar * 1 egg-beaten * 1 cup apple sauce (unsweetened) * 1/2 tsp. soda * 3 Tbsp. shortening Sift all dry ingredients. Add beaten egg, apple sauce and shortening. Cook on hot griddle or fry pan. We are so happy and excited for the big day! Lankln Legion Auxiliary news By Loretta McLaughlin LANKIN, N.D. -- President Pare Jallo called the meeting to order. Opening Prayer read by Tmdy Wippler followed by a moment of silence, pledge to our flag and the tgreamble. Attendance prizes went to Janice Canter and Betty Ruzicka. All members name drawn was Rita Olson. She was not present. Minutes of the last meeting and the treasurer's reports were given. President Pare Jallo thanked all the members that worked and brought food for both the Memorial Day Dinner and the annual Dons Polka Party meals. The 91 st American Legion State Convention will be held in Dickenson, June 24 to 27. Our unit will pay registrations tbr seven members. Winners of our grocery baskets this year were' Debbie Karas, Elaine Uhlir and Naomi Waketbrd. Discussion was held about changing some of our menu plans for the on-coming events. We are asked to serve the lunch in August at the Good Samaritan Center in Park River. This was our last meeting for this year; we will not meet again till we start our new year on Oct. 3.
