I Ice fishing this winter has been great in the little dams around, especially Matejcek Dam near Lankin, N.D. Anytime one can get an 18 pound fish and pull it through a hole in the ice like Dan Dub from Pisek, N.D. did, I think it is great. Seven and eight "pounders" have come from there too. Here are some fish recipes you might like. Pan Fried Fillets 4 fish fillets (Crappie or Perch are nice for this) * 1/4 cup oil 1/2 cup dry cracker crumbs * i tsp. paprika * 1/8 tsp. pepper 1/2 tsp. salt * 1/2 cup milk Heat the fat in a large fry pan. Combine the cracker crumbs with salt, pepper and paprika. Dip the fillets into the milk and then into the crumb mixture and coat well. Fry in hot oil. Brown the fillets on both sides, turning over once. Serve hot with this cucumber sauce. Cucumber Sauce 3/4 cup dairy sour cream * 1/4 tsp. prepared mustard * 1 tsp. grated onion * 1/2 tsp. salt * 1/2 cup chopped fine cucumber * Chopped parsley * Juice of 1/2 lemon Combine all ingredients and chill. This fish sauce is good too. Fish sauce 1 cup mayonnaise * 1/4 cup catsup * 1 tsp. horse radish * 1 tsp. Worcestershire Sauce * Salt and pepper Mix all ingredients thoroughly. Serve on friedor broiled fish. This sauce is good in fish salads. It makes 1 1/2 cups. Baked Bass with Bacon 6 Bass cleaned and filleted * 1/2 cup cornmeal * 1 1/2 tsp. salt * 1 1/2 tsp. paprika * 6 bacon slices * 3 tomatoes, peeled and cut into wedges Cut fillets into serving size pieces. Mix together cornmeal, salt and paprika. Dip the pieces into the cornmeal mixture and put into a baking dish. Top with the bacon. Bake in a hot oven for 20 minutes at 425 degrees. Remove from the oven and put fish on a platter and arrange tomatoes around it. If you are broiling the fish fillets, broil 5 inches from heat for 6 minutes.
