I think it does if April is a warm month. Whether it is or not, I have written up some rhubarb recipes. Rhubarb is prepared in many ways, from bread to dessert and all being tasty. Clip and save these recipes. Rhubarb Jam 5 cups Rhubarb cut-up • 1 cup of orange slice candy, cut fine • 5 cups sugar Wash and peel 5 cups of rhubarb, cut into pieces. Mix 5 cups sugar into rhubarb, and 1 cup of orange slice candy, finely cut. When thoroughly mixed, cook slowly for about 20 minutes or until jam consistency (the candy does not have to dissolve) Seal in sterilized jars. .... Rhubarb Dessert Mix together: 3 cups rhubarb cut into pieces • 1/2 cup sugar Mix and place in a buttered 8x8 inch pan and set aside. Mix the following: 3/4 cup sugar • 1/4 cup softened butter • 1 tsp. vanilla • 1 cup flour • 1 tsp. baking powder • 1/2 cup milk Cr6me the sugar, butter and vanilla, add the rest of the ingredients and spread over rhubarb mixture. This batter will be thick. Over the top of this batter, sprinkle the following. 1 cup sugar • 1 Tbsp. cornstarch • 1/4 tsp. salt In a sifter sprinkle the mixture that has been thoroughly mixed on top of rhubarb batter. Then pour 1 cup of boiling water over all. Bake at 325 degrees for 45 minutes, then at 350 degrees for 10 minutes or until done. Serve hot or cold with cool whip or ice cream. Delicious Rhubarb Bread Pudding 8 to 10 slices cinnamon bread cut into cubes 3 cups rhubarb cut-up • 6 large eggs • 2 1/2 cups half and half cream • 1 cup sugar • 1 tsp. vanilla • 1/2 tsp. nutmeg • 1 cup whipping cream • Butter Preheat oven to 350 degrees. In a 9 x 13 inch Pare sprayed pan, add the rhubarb. In a bowl add eggs, half and half cream, whipping cream, sugar, vanilla and nutmeg. Whisk this thoroughly, then pour over the bread, make sure all bits are soaked well. All bread should be wet. Dot with 2 Tbsp. of butter. Bake for one hour or until no longer runny. Vanilla Sauce: 1/2 cup butter • 1/2 cup half and half cream • 1/2 cup sugar and 1/2 cup brown sugar Cook and stir over medium heat for 5 to 8 minutes, stirring until it comes to a full rolling boil. Remove from heat and add ltsp. vanilla. Serve this sauce over pudding and top with cool whip. Until next time, "Dell" Co recton to R oql $o I'PdI?ItIVERN.D ....
