St. Pat's Day is but four days away falling on a Sunday this year which many people like. More time can be spent making a festive meal. A lady from Warren, MN swears by this recipe called a One Pot Meal (A meal for two) • 1 small onion, sliced • 4 small carrots, cut into chunks • 2 med. Potatoes, cut into chunks • 1 small beef brisket with spice packet • 1/3 C. unsweetened apple juice • 2 whole cloves. 1 Tbsp. brown sugar • 1/2 tsp. grated orange peel • 1/2 tsp. prepared mustard • 2 cabbage wedges • Place onion in a 3 quart slow cooker. Top with carrots, potatoes, and brisket: Combine the apple juice; cloves, brown sugar, orange peel, mustard and contents of spice packet. Cover and cook on high for 3 1/2 to 4 hours. Add the cabbage; cover and cook 20 to 30 minutes longer or until meat and vegetables are tender. Strain, discard cloves; Serve pan juices with corned beef and vegetables. Yields 2 Servings. Irish Soda Muffins 1 C. plus 2 Tbsp. flour • 1/4 C. plus 1 tsp. sugar, divided • 1 tsp. baking powder • 1/4 tsp. soda • 1/4 tsp. salt • 1/2 C. sour cream • 2 Tbsp. vegetable oil • 2 Tbsp. wll beaten egg • 1/2 C. raisins Mix together flour and 2 Tbsps. sugar with the baking powder, soda and salt. Mix until all is blended well, then add rest of sugar and other ingredients in a separate bowl, when thoroughly mixed, pour into muffin or paper liners and bake 15-18 minutes at 350 degrees. **Blueberries may be used rather than raisins if desired. This Sauerkraut Casserole is a favorite of the Irish, Sauerkraut Casserole 1 lb. ground beef • 1/2 lb. ground pork steak • 1/4 tsp. pepper • 1 tsp. salt • 1 lb. sauerkraut, drained • 2 C. wide egg noodles (do not cook) • 1 small onion, minced • 1 can creamed mushroom soup • 1 can creamed celery soup • 1/2 C. grated cheddar cheese Mix the meats, pepper, salt and onion together and brown. Take 1/2 of this mixture and put into casserole, then a layer of sauerkraut. Follow wit[/ rest of meat and a layer of sauerkraut. Sprinkle noodles on top. Pour on soups and cook for 1/2 an hour. Reduce heat and sprinkle with cheese on top, and bake for 1/2 hour longer. Serve hot.
