I have done this for the past 4 years and every week the eggs go like paper in a fire. I have published this recipe before and as a rule I never repeat one unless it is called for or I find a reason to do so. Last week I got 3 phone calls for the Egg Ball recipe. I promised to put it in one of my columns, people must like them, and here is that "Egg Ball Recipe". Egg Balls 7 large hard boiled eggs * 1 Tbsp. mayonnaise * 1 Tbsp. minced onion * Salt and pepper to taste * Shredded cheese Mash the whole peeled boiled egg. Add the onion, mayonnaise, salt and pepper to taste. Roll into balls the size of a walnut then into the shredded cheese. (Makes about 36 balls) I wonder why someone hasn't thought of or come up with "National Egg Month", or have they? Hasty Omelet 3 eggs, slightly beaten * 2 cups milk * I tsp. salt * 1/8 tsp. pepper * 3 cups day'old bread, course pieces Blend together beaten eggs, milk, salt and pepper. Stir in bread crumbs lightly. Turn into a heavy greased skillet. Cover. Cook slowly over low heat until set and lightly browned. Cut into serving size pieces, turn and brown on other side. Serve at once. Eggs in Toast Rings 12 slices bread * Butter * 12 eggs * Salt and pepper Cut center from bread slices with biscuit cutter (Toast rims on one side on a grill). Butter untoasted side then turn. Break an egg into each toast ring, season with salt and pepper. Cook until eggs are set. These can be made on a cookie sheet and baked at 350 degrees. As CEO of the Citizens State Bank of Lankin, LaVerne was a leader in banking in the region and fostered lasting relationships built on trust and integrity. She enhanced the value of our communities through her commitment to service. LaVeme served on the Edmore School Board for years and was dedicated to the education of our children. Dining With Diabetes class off,red for those with diabetes and their families PARK RIVER, N.D. -- Dining with Diabetes North Dakota Style will be offered in Graflon starting March 3. Dining with Diabetes is an educational program packaged in a series of four classes to help people with diabetes manage their eating, their activities and monitoring their health. The classes will begin Thursday, March 3, from 2 p.m. to 4:30 p.m. at the Valley Ambulance Building in Grafton. Dining with Diabetes is a class that meets 4 times (class dates are March 3, 10, 24 and 31). This program is open to those with diabetes, their family members and caretakers. There is a $15 registration fee per person. A family member or caregiver may attend with a person with diabetes for an additional $5. Space is limited and pre- registration is required. Participants must attend all four class sessions. Participants will learn how to create meals that are healthy, easy to prepare and taste good. Recipes will be provided, and participants will have the opportunity to taste sample recipes. Participants will also learn up-to-date information on nutrition, meal planning, exercise and how to understand common diabetes-related medical tests. Recipe booklets and handouts will be given to each participant. Diabetes is a very serious and costly disease, but research has shown that those who learn to manage their blood glucose (sugar) levels by eating a healthy diet and exercising regularly can lower their risks of complications and lead a healthier and more productive life. The Dining with Diabetes program is being offered through a partnership between NDSU Extension Service and Unity Medical Center. The sessions will be taught by Jane Myers, RD, LRD, CDE; Sandra Lessard, RN, and Julie Zikmund, MPH, RD, LRD; NDSU Extension Agent.
