Last week my nephew Mark Thompson, was at a potato meeting in Wisconsin and came home with great potato recipes, dressings for potato salad and special sauces used on cooked potatoes. I am not a "pizza fan" but this potato pizza recipe caught my eye, I will try it, as I cook potatoes for myself most every day. Here is that recipe with my favorite-potato pancakes. Potato Pizza 1/4 lb. Yukon baby potatoes * 1  12 inch pizza crust * 1/2 cup cheddar cheese-shredded * 1/4cup mozzarella cheese- shredded * Salt and pepper to taste * Olive oil Slice potatoes very thin. Place these slices in cold water for 2 hours to remove the starch. Drain and rinse in fresh water pat dry with paper towels. Preheat oven to 450 degrees. Cover pizza crust with shredded cheese. Cover with potato slices, season with salt and pepper. Drizzle with olive oil and bake until crust is done and potatoes are crispy (about 8 to 10 minutes). Drizzle with a bit of olive oil and serve immediately. Potato Pancakes 3 eggs, beaten well * 2 tsp. salt * 1 Tbsp. sugar * 3 cups milk * 1 Tbsp. melted fat * 2 1/2 cups sifted flour * 3 cups grated raw potatoes Combine the well beaten eggs, salt, sugar, milk and fat. Gradually stir in flour, mixing or beating thoroughly. Bake at once on a greased hot griddle. Make each cake with 1 rounded tablespoon of batter. Bake 3 minutes on each side turning once. Seven Rustlers 4-H Club news EAST GRAND FORKS, Minn. -- The Seven Rustlers 4-H Club met at Liberty Lanes in East Grand Forks on Sunday, January 23rd for their Christmas Party and bowling. Bowling and pizza was enjoyed by all members and their families• Christmas gilts were exchanged. A short meeting was held. No reports were given• Livestock Judging Team has been holding workouts and the next one will be at Knudson's on Sunday, January 30th. Cameron Bina reported on the Crop Judging workouts and encouraged all members to take advantage of this program. Any members wanting to do a quilting project are to contact Loft Ternquist.
