On cold days it is always nice to use your oven for a bit of warmth. It is always great too, to have some baking in the house especially after the holidays if everybody was home snitching goodies that you had for Christmas and New Years. Here are some bar recipes you will like. Gingerbread Bars 1 pkg. gingerbread mix 1/2 C. butter, melted 1 egg 1 (8 oz.) cream cheese, softened 2 eggs, beaten well 4 1/2 C. powdered sugar Preheat oven to 350 degrees. In a bowl, combine ginger bread cake mix, butter and 1 egg. Spread evenly into 2, 8 in pans. Combine cream cheese, 2 eggs, and powdered sugar in a medium bowl. Spread this mixture over gingerbread layer in each pan. Bake 30 to 35 minutes or until lightly browned. Cool completely. Store in air-tight containers. Yummy Bars 1 pkg. pecan cake mix 1 stick melted butter (add this to dry cake mix) 8 oz. cream cheese 1/2 C. melted butter 2 eggs, beaten 3 1/2 C. powdered sugar Mix cake mix and melted butter together and press into jelly roll pan. Mix cream cheese, butter, eggs and powdered sugar together and pour over crust. Top with C. of chopped pecans. Bake at 300 degrees for 50 minutes. Pumpkin Pie Bars 1 1/3 C. flour 1/2 C. brown sugar, packed 3/4 C. white sugar 3/4 cold margarine 1 C. Quacker oats 112 C. chopped pecans 1 pkg. (8 oz) cream cheese 3 eggs 1 can (15 oz) pumpkin 1 Tbsp. pumpkin spice Heat oven to 350 degrees. Line a pan 9x 13 inch with foil, grease the foil. Mix flour, brown sugar and 114 C. of sugar in a bowl. Cut in margarine with pastry blender (or knife) until mixture is crumbly. Stir in oats and press mixture onto bottom of pan, reserving 1/4 to 1/2 of mixture for top. Bake 15 minutes. Beat cream cheese, remaining 1/2 C. sugar, eggs, pecans and pumpkin and pumpkin spice in small bowl with electric mixer until well blended,r Pour over crust, sprinkle with the reserved crumb mixture.
